PEACHES IN RED WINE

Makes 4 servings

Use a red wine with a fruity flavor and aroma, such as Dolcetto, for this dessert, which is elegant and light after a substantial Italian meal. Accompany with crisp, little amaretti macaroon cookies.

½ cup fruity Italian red wine

1 teaspoon granulated sugar

2 large ripe peaches, peeled and thickly sliced

½ cup ricotta cheese

1 tablespoon powdered sugar

½ teaspoon pure vanilla extract

Sprigs of fresh mint for garnish

• Combine the red wine and sugar in a medium bowl; stir until the sugar is dissolved. Add the peaches and stir gently.

• Stir together the ricotta cheese, powdered sugar, and vanilla in a small bowl.

• To serve, spoon the peaches and wine into dessert bowls. Add dollops of the ricotta mixture and garnish with mint sprigs.
